There is another boss that does not lock you in to the room,  have a feeling it is the Wasp boss. I remember attacking a boss and being able to leave, heal at a save point and resume the fight with the boss with the boss not recovering from previously dealt damage.

Later on I encounter this guy with the cutscene talking about skipping it and the cutscene made no sesnnse since I could basically do something similar with a previous boss!

I assume being able to leave that other boss's room is actually a bug.
